Chicken enchiladas a la Brett

I have to brag every time my husband cooks,because he just does an amazing job.He finds a recipe,reads it through,but then he makes it in his own way,and it works every time. He enjoys it a lot,as well, and won't let me near the kitchen to help him. :) Maybe we'll have to get him into Culinary school! ;-)
